After being diagnosed as a Type 2 Diabetic with Macular Degeneration he put together a large collection of sandwiches that are mainly low in fat and contain slow release carbohydrates. This makes them ideal for a quick fix in the middle of a workday or even as a complete meal at other times. The amounts of each ingredient can be varied to suit individual preferences as can the types of breads used. For the diabetic it will be best to stick with multigrain breads.
